
Coffee, like any plant depends upon water for life. Top producing coffee regions must have an adequate annual rainfall to sustain the life of the coffee. But that's not all water has to do with coffee. There are two main methods of processing coffee.
First, there is what is known as the dry or natural method. In this this process, the whole cherry is allowed to dry on the tree or is picked and then dried. It takes about 3 - 4 weeks to sun dry picked coffee. Well experienced farmers produce high quality coffee using this method. The other method, commonly known as the European Preparation Process, uses water.
In this method, the Coffee is prepared through a "cleansing" process using water. Producers of high quality coffee waste little time between picking and fermentation in order to reduce the possibility of crop loss. Fermentation amounts to placing the wet parchment coffee into troughs or tanks for 24 - 48 hours. This allows the enzymes in the coffee's "gum" or "binding agent", to dissolve. Timing of fermentation is of utmost importance. Either too much or too little fermentation, and the quality of the coffee suffers. Once fermentation is complete, the coffee is generally placed into "washing troughs" or "channels" and then pushed back and forth through the clean water like pebbles under a clear rushing stream.
