		Flores Bajawa Ngura Our first limited edition coffee selection for 2010 is from the Indonesian island of Flores. Never heard of it? This tiny island on the Indonesian archipelago is nestled between Bali and Timor. Dubbed "Cabo da Flores" or the "flowered cape" after its beautiful coral reefs on the eastern tip, Flores Bajawa Ngura tastes closer to a Java than the semi-washed coffees of Sumatra and is Organic and Shade Grown. Typical of the best Indonesian coffees, it has a rich, syrupy body with an abundance of aroma in the cup and just enough mild acidity to carry the flavor. The wet process imparts a noticeable sweetness to the mix. Look for a hint of caramel and a slight nutty finish that you will find quite satisfying. 		Garabito Estate Costa Tarrazu Our quarterly estate selection for Q4 2009 is Garabito Estate Costa Rican Tarrazu Honey Process from Finca Los Lobos. This estate is over 100 years old and lies in a deeply shaded valley in the heart of the steep Tarrazu region. This special coffee is a high grown mild and is shade grown and 100% sun dried. As a micromill producer, Finca Los Lobos controls the coffee from harvest to bagging. On-site milling ensures the coffee has not been blended with other less desirable coffees at large, regional wet mills. After harvest, the cherry goes through a unique "honey process." The mucilage is not washed off in the fermentation tanks in the traditional manner, but left on the bean as it begins to dry. The beans are then placed on raised patio beds in the sun and turned constantly to achieve consistent drying. This process imparts an extra mellow, low acid, fruitiness to the finished product. Garibito Estate Costa Rican Tarrazu is also shade grown and bird friendly, using a variety of citrus trees which provide additional habitat for native birds living in nearby forests and wildlife preserves.
